APPLE MUFFINS

 

Ingredients:

 

1 ½ cups brown sugar

½ cup cooking oil

1 egg

1 tsp. vanilla

1 cup buttermilk

1 ½ cups diced apple

2 ½ cups flour

1 tsp. baking soda

1 tsp. baking powder

½ tsp. salt

 

Topping:

 

1 tsp. melted butter

1/3 cup sugar

1 tsp. cinnamon

 

Directions:

 

  • In large bowl, mix brown sugar, oil, egg, vanilla and buttermilk
  • Stir in apple
  • Add flour, baking soda, baking powder and salt
  • Mix well
  • Spoon batter into greased muffin pan
  • Combine melted butter, sugar and cinnamon
  • Spoon over top of muffins, pressing it down slightly
  • Bake in oven at 350° for 2 minutes

BANANA RAISIN MUFFINS

 

Ingredients:

 

¼ cup sugar

1 tsp. baking soda

¼ tsp. salt

1 ½ cups whole wheat flour

¼ cup olive oil

¼ cup milk

2 medium bananas, mashed (about 1 cup)

1 tsp. vanilla

1/3 cup raisins

 

Directions:

 

  • Preheat oven to 375°
  • Place sugar, baking soda, salt and flour into a bowl
  • Stir well to combine ingredients
  • Add oil, milk, mashed bananas and vanilla
  • Mix just until flour is moistened
  • Fold in raisins
  • Spray muffin tin
  • Fill 2/3 full with batter
  • Bake at 375° for 15 – 20 minutes or until golden brown
  • Remove from pan immediately and cool on rack

 

Serves 6

BLUEBERRY MUFFINS

 

Ingredients:

 

1 egg

¾ cup milk

½ cup vegetable oil

2 cups all-purpose flour

1/3 cup packed brown sugar

3 tsp. baking powder

1 tsp. salt

1 tsp. vanilla

1 cup fresh or ¾ cup frozen blueberries, drained

 

Directions:

 

  • Beat egg in large bowl
  • Stir in milk and oil
  • Stir in remaining ingredients, except blueberries
  • Mix just until moistened
  • Fold in blueberries
  • Fill greased muffin tins ¾ full
  • Bake at 400° for 18 – 20 minutes

CHOCOLATE CHIP MUFFINS

 

Ingredients:

 

1 egg

¾ cup milk

½ cup vegetable oil

2 cups all-purpose flour

3 tsp. baking powder

1 tsp. salt

1 tsp. vanilla

2/3 cup semisweet chocolate chips

 

Directions:

 

  • Beat egg in large bowl
  • Stir in milk and oil
  • Stir in remaining ingredients
  • Mix just until moistened
  • Fill greased muffin tins ¾ full
  • Bake at 400° for 18 – 20 minutes

FEATHER–LIGHT MUFFINS

 

Ingredients:

 

1/3 cup shortening

½ cup sugar

1 egg

1 ½ cups cake flour

1 ½ tsp. baking powder

½ tsp. salt

¼ tsp. ground nutmeg

½ cup milk

 

 

Directions:

 

  • In a mixing bowl, cream shortening, sugar and egg
  • Combine dry ingredients
  • Add to creamed mixture alternately with milk
  • Fill greased muffin tins 2/3 full
  • Bake at 325° for 20 – 25 minutes or until golden brown
  • Let cool

 

Makes 8 – 10 muffins

LOW-FAT APPLE CINNAMON MUFFINS

 

Ingredients:

 

¾ cup skim milk

1/3 cup non-fat plain yogurt

2 egg whites

1 egg

2 tsp. vanilla

1 ½ cups all purpose flour

1/3 cup dark brown sugar, firmly packed

1 ½ tsp. ground cinnamon

1 ½ tsp. baking soda

¾ tsp. baking powder

1 medium apple, peeled, cored and chopped

 

Directions:

 

  • Heat oven to 375°
  • Spray bottoms of 12 medium muffin cups
  • In large bowl, beat milk, yogurt, egg whites, egg and vanilla
  • In separate bowl, combine flour, sugar, cinnamon, baking soda and baking powder
  • Fold dry ingredients into wet until just moist
  • Stir in apple
  • Divide batter among muffin cups
  • Bake 18 – 20 minutes or until a toothpick inserted into center comes out clean.
  • Immediately remove from pan and cool on wire rack

 

Makes 12 muffins

102 calories and 1 gram fat per muffin

OAT-PEACH MUFFINS

 

Ingredients:

 

1 cup quick cooking oats

1 cup buttermilk

¼ cup vegetable oil

2 Tbs. light molasses

1 tsp. vanilla

1 egg

1 ¼ cups all-purpose flour

¾ cup peaches, diced into ¼ inch pieces

  • If using canned peaches, drain well
  • May substitute chopped dates, raisins, or other fruit for peaches

¾ cup coarsely chopped walnuts

¼ cup packed brown sugar

1 ½ tsp. ground cinnamon

1 tsp. baking soda

1 tsp. baking powder

½ tsp. salt

 

Directions:

 

  • Mix oats and buttermilk in large bowl
  • Beat in oil, molasses, vanilla and egg
  • Stir in remaining ingredients just until flour is moistened
  • Grease bottoms of 12 medium muffin cups
  • Divide batter among cups (will be full)
  • Bake at 400° for 15 – 20 minutes (until toothpick comes out clean when inserted)
  • Immediately remove from cups and cool

SWEET MUFFINS

 

Ingredients:

 

1 egg

¼ cup oil

¾ cup milk

1 ½ cups flour

½ cup sugar

2 tsp. baking powder

½ tsp. salt

berries, shredded apples, or cinnamon sugar

 

Directions:

 

  • Mix all ingredients together
  • Place in muffin tin 
  • Bake at 400° for 20 – 25 minutes. 

 

Makes 1 dozen.
