AUTUMN PORK CHOPS

 

Ingredients:

 

6 thick pork chops

3 apples, cored and sliced

¼ cup brown sugar

½ tsp. cinnamon

2 Tbs. butter

½ cup sherry

salt & pepper

 

Directions:

 

  • brown pork chops
  • arrange apple slices in 13 X 9 baking dish
  • mix sugar and cinnamon and sprinkle over apples
  • dot with butter
  • place pork chops on apples
  • sprinkle with salt & pepper
  • pour sherry over all
  • cover and bake at 350° for 1 ½ hours

 

Serves 6

HAM AND BROCCOLI CREPES

 

Ingredients:

 

Cooked crepes

Ham, sliced in ½ inch strips

Cooked broccoli

 

Directions:

 

  • Place ham slices and broccoli across center of crepe
  • Roll crepe together
  • Place in oven safe dish, seam side down
  • Bake at 350° for 25 minutes
  • Remove from oven, place on plate, and pour cheese sauce on top

HAM BALLS

 

Ingredients:

 

1 ½ pounds ground beef

1 ½ pounds ground ham

2 cups cracker crumbs

3 beaten eggs

1 ½ cups tomato juice

1 cup brown sugar

¼ cup vinegar

1 tsp mustard

 

Directions:

 

  • Mix beef, ham, cracker crumbs, eggs and tomato juice
  • Make into golf ball sized balls
  • Place in 3 quart casserole dish
  • Bake at 350° for 30 minutes
  • During this time, combine brown sugar, vinegar and mustard in sauce pan
  • Bring to a boil and continue boiling for 1 minute
  • After original 30 minute baking is complete, remove from oven
  • Cover with mixture and bake an additional 30 minutes

PORK CHOP OVEN DINNER

 

Ingredients:

 

6 – ¾ inch pork chops

3 Tbs. flour

salt & pepper

¼ tsp. garlic powder

½ cup water

¼ cup dry sherry

1 Tbs. snipped parsley

1 tsp. ground cloves

1 bay leaf

6 small carrots, peeled and halved lengthwise

6 small potatoes, peeled and halved

1 medium onion, thinly sliced

 

Directions:

 

  • Melt 2 Tbs. butter in skillet
  • Combine flour, salt, pepper, and garlic powder
  • Dredge pork chops in mixture
  • Brown in skillet, on medium heat, for 10 minutes per side
  • In 3 quart casserole, combine water, sherry, parsley, cloves, bay leaf, carrots and potatoes
  • Arrange pork chops on top
  • Add onion slices
  • Cover and bake at 350° for 1 hour and 15 minutes or until veggies and meat are tender, basting once or twice during cooking time
  • Skim off excess fat and remove bay leaf.

PORK MEATBALLS

 

Ingredients:

 

1 pound ground pork

1 Tbs. onion flakes

¾ cup crushed corn flakes

½ tsp. salt

1/8 tsp. ground black pepper

1 egg

¼ cup ketchup

3 Tbs. brown sugar

1 tsp. dry mustard

 

Directions:

 

  • Heat oven to 375°
  • In a large bowl, combine ground pork, onion flakes, corn flakes, salt, pepper and egg
  • In a small bowl stir together ketchup, brown sugar and dry mustard
  • Spoon 2 Tbs. of the ketchup mixture into the pork and mix well
  • Spray muffin tin with vegetable cooking spray
  • Form 6 meatballs and place in muffin tin
  • Coat the top of each meatball with the remaining ketchup mixture
  • Bake at 375° for 30 minutes, until nicely browned and glazed

 

Serves 6
