AMANA COFFEE CAKE

 

Ingredients:    

2/3 cup butter

2 eggs

1 cup sugar

½ cup brown sugar

1 cup buttermilk (to make buttermilk: 2 Tbs. vinegar & the remainder milk)

2 cups flour

½ tsp. salt

1 tsp. cinnamon

1 tsp. baking soda

 

Directions:

 

  • Mix all ingredients together
  • Put in a 9 X 13 cake pan
  • Sprinkle with topping

 

Topping:          1 cup brown sugar

                        1 tsp. cinnamon

                        1 tsp. nutmeg

 

  • Refrigerate 8 hours or overnight
  • Bake at 350° for 45 minutes

APPLE CAKE

 

Ingredients:    

1/3 cup orange juice

 ½ tsp. vanilla

4 eggs

1 cup oil

2 cups sugar

3 cups flour

2 tsp. baking powder

 

Directions:

 

  • Beat all ingredients together for 10 minutes – will remain very thick. 
  • Peel and slice 6 medium apples – 3 slices to a quarter. 
  • Mix 1 tsp. cinnamon and 1 cup sugar. 
  • Grease a bunt pan and sprinkle some cinnamon-sugar in the bottom.
  • Layer:   Batter (light on the first layer)

                        Apples

                        Cinnamon sugar

  • Repeat layering for a total of 3 layers.
  • Bake at 350° for 1 ½ hours.
  • Cool before removing from pan.

APPLE COBBLER

 

Fruit:

 

4 cups chopped apples

1 Tbs. flour

2/3 cup sugar

 

Directions:

 

  • Combine in saucepan and heat to a boil.
  • Cook over medium heat for 5 minutes, stirring occasionally.
  • Pour mixture into an 8 X 8 pan.
  • Make dough.

 

Dough:

 

1 ¾ cups sifted flour

½ tsp. salt

3 tsp. baking powder

6 Tbs. butter

¾ cup milk

 

Directions:

 

  • Mix dry ingredients. 
  • Add and cut in butter. 
  • Add milk and mix well.
  • Place dough evenly, by teaspoonfuls, over apple mixture.
  • Dot with 4 Tbs. butter and sprinkle with cinnamon. 
  • Bake at 425° for about 30 minutes.

APPLE CRISP

 

Ingredients:

 

1 cup sugar

½ cup shortening

1 egg

2 cups grated apple

1 ½ cups flour

1 tsp. baking soda

½ tsp. salt

2 tsp. cinnamon

½ cup brown sugar

 

Directions:

 

  • Cream together sugar and shortening
  • Add egg and beat well
  • Add apples, flour, baking soda, salt and 1 tsp. cinnamon
  • Mix well
  • Place in a 9 X 13 greased pan
  • Cover with mixture of brown sugar and 1 tsp. cinnamon
  • Bake at 350° for 30 – 40 minutes

BLUEBERRY CRUMB CAKE

 

Ingredients:

 

1 ¼ cups flour

½ cup sugar

¼ cup butter, softened

¼ cup shortening

1/3 cup milk

1 ½ tsp. baking powder

½ tsp. vanilla

¼ tsp. salt

1 egg

1 ½ cups fresh or frozen blueberries, drained

 

Directions:

 

  • Mix all ingredients except blueberries
  • Spread in 8" square pan
  • Sprinkle with blueberries
  • Sprinkle crumb topping (below) on top
  • Bake at 350° for 45 – 50 minutes

 

 

Crumb Topping Ingredients:

 

½ cup sugar

1/3 cup flour

¼ cup butter, softened

½ tsp. ground cinnamon

 

Directions:

 

  • Mix all ingredients until crumbly

CHESS CAKE

 

Ingredients:

 

1 cup melted butter

2 2/3 cups brown sugar

2 cups self-rising flour

½ cup sugar

½ cup chopped nuts (pecans or walnuts)

4 eggs, beaten

1 tsp. vanilla

 

Directions:

 

  • Mix together all ingredients
  • Spread in either two 8 inch, or one 9 X 13 inch ungreased pan
  • Bake at 350° for 25 – 30 minutes
  • Do not over bake (allow some spring in the center)
  • Cool completely before cutting

CHOCOLATE JELLY ROLL

 

Ingredients:    

4 egg yolks (save whites)

1/3 cup sugar

½ tsp. vanilla

½ cups sugar

2/3 cup sifted flour

¼ cup cocoa

1 tsp. baking powder

¼ tsp. salt

 

Directions:

 

  • In a small bowl, beat egg yolks till thick and lemon colored. 
  • Gradually beat in 1/3 cup sugar and vanilla. 
  • In large bowl, beat egg whites till soft peaks form. 
  • Gradually add ½ cup sugar and beat till stiff peaks form. 
  • Fold yolks into whites.  
  • Sift together dry ingredients and fold into egg mixture. 
  • Spread batter in prepared jelly roll pan. 
  • Bake at 350° for 10 – 12 minutes.
  • Immediately loosen edges and turn out onto a towel sprinkled with powdered sugar. 
  • Roll cake and towel together lengthwise and cool. 
  • Carefully unroll and spread with whipped cream or creamed cheese and roll up again. 
  • Refrigerate. 
  • May also spread with softened ice cream and freeze.
  • Slice when ready to serve

GERMAN APPLE CRISP

 

Ingredients:

 

3 eggs

1 cup oil

2 cups sugar

½ tsp. salt

2 cups flour

1 tsp. vanilla

2 tsp. cinnamon

1 tsp. baking soda

¼ cup nuts, if desired

4 cups thinly sliced apples

 

Directions:

 

  • Beat eggs and oil until foamy
  • Add remaining ingredients and mix thoroughly
  • Pour into a 9 X 13 prepared cake pan
  • Bake at 350° for 50 – 60 minutes

 

Icing:

 

3 oz. pkg. cream cheese

1 Tbs. butter

½ tsp. vanilla

2 cups powdered sugar

 

  • Combine all ingredients and beat until smooth
  • Frost cake when cool

GERMAN CHOCOLATE CAKE

 

Ingredients:

 

1 cup shortening

2 ¼ cups sugar

1 pkg. German chocolate

½ cup hot water

¾ cup buttermilk

1 tsp. baking soda

4 egg yolks

2 ½ cups flour

½ tsp. salt

7 egg whites

 

Directions:

 

  • Cream shortening and sugar
  • Melt chocolate and add to creamed mixture
  • Mix in soda and buttermilk
  • Beat egg whites till stiff
  • Fold into batter
  • Place in a greased 9 X 13 cake pan
  • Bake at 375° for 30 – 40 minutes

MISSISSIPPI MUD CAKE

 

Ingredients:

 

2 cups sugar

1 cup oil

4 eggs

1 ½ cups flour

½ cup cocoa

3 tsp. vanilla

½ tsp. salt

1 cup chopped nuts (optional)

miniature marshmallows

 

 

Directions:

 

  • Cream sugar and oil
  • Add eggs and beat
  • Sift flour, cocoa and salt
  • Add to sugar mixture and mix
  • Stir in nuts and vanilla
  • Pour into a 9 X 13 greased cake pan
  • Bake at 300° for about 45 minutes
  • Remove from oven, cover with marshmallows
  • Return to oven and bake an additional 5 minutes
  • Remove from oven and frost immediately

 

MISSISSIPPI MUD CAKE FROSTING

 

Ingredients:

 

2 sticks butter

½ cup cocoa

1 pound powdered sugar

½ cup evaporated milk

1 tsp. vanilla

1 cup chopped nuts (optional)

 

Directions:

 

  • Mix sugar and cocoa together
  • Melt butter and add to above
  • Add milk, vanilla and nuts and mix together
  • Spread on cake and let cool for at least 2 hours before cutting

MOCK CHOCOLATE ÉCLAIRS

 

Directions:

 

  • Mix 2 – 3.4 ounce boxes of French Vanilla pudding with 3 cups milk. 
  • Fold in 8 ounces of Cool Whip.
  • Line greased 9 X 13 pan with graham crackers. 
  • Pour in half of the pudding. 
  • Add another layer of graham crackers
  • Pour on the rest of the pudding
  • Add a top layer of graham crackers. 
  • Push crackers into pudding to fill gaps. 
  • Frost and chill several hours.

 

Frosting:         

3 Tbs. butter

1 tsp. vanilla

3 Tbs. hot water

3 Tbs. cocoa

1 ½ cups powdered sugar

4 ounces Cool Whip, if desired

 

  • Mix till creamy and smooth.

PINA COLADA CAKE

 

Ingredients:

 

1 yellow cake mix

1 large can crushed pineapple

1 – 8 oz. can crème of coconut

1 can condensed milk

whipped cream

 

Directions:

 

  • Bake cake according to box directions
  • poke holes with skewer about 1 inch apart
  • Mix together pineapple, crème of coconut and milk
  • Pour on cake
  • Refrigerate for at least 2 hours
  • Top with whipped cream and serve

SOUR CREAM COFFEE CAKE

 

Ingredients:

 

1 cup butter

2 cups sugar

2 eggs

1 cup sour cream

½ tsp. vanilla

2 cups flour

1 tsp. baking powder

¼ tsp. salt

2 cups brown sugar

4 tsp. cinnamon

 

Directions:

 

  • Cream together butter and sugar
  • Add eggs, sour cream and vanilla and mix well
  • Add flour, baking powder and salt and mix well
  • In separate bowl, mix brown sugar and cinnamon
  • Place half the batter in a prepared 9 X 13 cake pan
  • Sprinkle half the brown sugar and cinnamon mixture on top
  • Add remaining batter
  • Sprinkle the remaining sugar mixture on top
  • Bake at 350° for 50 minutes

STRAWBERRY CAKE

 

Ingredients:

 

1 pkg. white cake mix without pudding

1 3oz. strawberry Jello

1 cup oil

½ cup water

3 eggs

½  of a 10 oz. pkg. thawed frozen strawberries (other half is for frosting)

 

Directions:

 

  • Mix together cake mix and Jello
  • Add oil, water, eggs and half pkg. of strawberries
  • Bake at 350° for 30 – 35 minutes, or till done

 

FROSTING

 

Ingredients:

 

1 stick melted butter

1 pound powdered sugar

½ pkg. strawberries

 

Directions:

 

  • Mix together and frost cake

TEXAS CHOCOLATE CAKE

 

Ingredients:    

 

1 cup butter

¼ cup cocoa powder

1 cup water

2 cups flour

2 cups sugar

½ tsp. salt

2 eggs

½ cup buttermilk

            (or make buttermilk by combining 2 Tbs. vinegar & remainder milk)

1 tsp. vanilla

1 tsp. baking soda

 

Directions:

  • Bring to a boil in saucepan, butter, cocoa and water
  • Add above mixture to flour, sugar and salt
  • Mix well and add eggs, buttermilk, vanilla and baking soda
  • Mix well and pour into prepared cake pan. 
  • Bake at 350° for 30 minutes. 
  • Frost while hot.

 

 

TEXAS CHOCOLATE CAKE FROSTING

 

Begin making 5 minutes before cake is done.

 

Ingredients:    

¼ cup butter

¼ cup cocoa powder

2 ½ Tbs. milk

½ pound powdered sugar

½ tsp. vanilla

 

  • Bring butter, cocoa and milk to a boil
  • Add powdered sugar and vanilla
  • Beat well and frost while cake is hot.

TURTLE CAKE

 

Ingredients:

 

1 pkg. German chocolate cake mix

¾ cup butter

1 cup condensed milk

1 – 14 oz. pkg. caramels

1 cup chopped pecans (optional)

1 cup chocolate chips

 

Directions:

 

  • Combine cake mix, butter, and 2/3 cups of the condensed milk and mix well
  • Press half the mixture into a greased 9 X 13 cake pan
  • Bake at 350° for 12 minutes
  • Melt caramels in the remaining 1/3 cup of milk
  • Pour over baked cake
  • Sprinkle pecans and chocolate chips over caramel mixture
  • Add the rest of cake mixture over top
  • Bake for an additional 20 minutes

WHITE CAKE

 

Ingredients:

 

½ cup shortening

1 ½ cups sugar

2 eggs

1 ½ cups milk

2 cups flour

2 tsp. baking powder

½ tsp. salt

 

Directions:

 

  • Cream together shortening and sugar
  • Add eggs and milk and mix
  • Sift together flour, baking powder and salt and add to above
  • Mix well
  • Pour into a 9 X 13 prepared cake pan
  • Bake at 375° for  20 – 25 minutes
